Apple Butter Snickerdoodle Muffin Top Cookies

Cookie Ingredients:

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup unsalted butter, softened
  • ¼ cup granulated sugar 
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup Butter Than Jam Apple Cinnamon Bliss Fruit Butter

Topping:

  • ⅓ cup granulated sugar
  • 1 teaspoon cinnamon

Glaze:

  • 2 Tbsp. unsalted butter, melted
  • 1 cup powdered sugar
  • 2 Tbsp. Butter Than Jam Apple Cinnamon Bliss Fruit Butter
  • 1/2 tsp. vanilla extract
  • pinch of salt
  • splash of milk 

Instructions:

  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

  2. Using an electric mixer, cream together the softened butter and sugar until light and fluffy.

  3. Beat in the eggs one at a time. Then, mix in the vanilla extract and the star of the show: ½ cup of Butter Than Jam Apple Cinnamon Bliss Fruit Butter! Mix until just incorporated. Finally, gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  4. Fold the dough into a ball and place it in a covered bowl, wrapped tightly with plastic wrap. Refrigerate for 2 hours. Chilling the dough will help prevent the cookies from spreading too thin while baking, resulting in a thicker, chewier cookie.

  5. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.

  6. In a small bowl, combine the granulated sugar and cinnamon for a delightful topping. Set aside until cookie dough is ready.

  7. Use a tablespoon cookie scoop and portion out the cookies with 2 tablespoons. Gently, roll each ball in your hands. Then, roll each one in the cinnamon-sugar mixture, making sure they're evenly coated.

  8. Place the cookie dough balls on your prepared baking sheets, leaving space between them for spreading.

  9. Bake the cookies for 20 minutes, or until they have a light golden brown color around the edges and on top.

  10. Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.  While the cookies cool, prepare the glaze. In a bowl, whisk together the melted butter, powdered sugar, Butter Than Jam Apple Cinnamon Bliss Fruit Butter, vanilla extract, milk and a pinch of salt. 

  11. Once the cookies have cooled slightly, use a spoon to drizzle them with the warm glaze. Let the glaze set before enjoying!

Tip: If you have extra cinnamon-sugar topping, you can sprinkle some of it over the drizzled cookies.
