Instructions:

In a medium bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.

In a separate bowl, whisk together the milk, egg, and fruit butter until smooth.

Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined. Don't overmix! Some lumps are okay.

Slowly, stir in the melted butter.

Heat a lightly greased pancake griddle or non-stick pan over medium heat (around 325°F).

To make silver dollar pancakes, you can use a measuring tablespoon or a small cookie scoop to portion out the batter. Be sure to leave space between them for spreading if you don’t have a pancake griddle.
- Pour or scoop about 2 tablespoons of batter per pancake onto the hot griddle.

Cook the pancakes for 2-3 minutes, or until bubbles appear on the surface and the edges begin to set.
